2 Tortillas Wraps | 1 Vine-ripened Tomato chopped | 5cm Cucumber pieces | 50 Feta cheese | 2Tbsp Houmous | 6 Kalamata (Brown or Black ) Olives


Heat the tortillas for about 6 seconds on each side , turn it using a tong to avoid getting burn. Now make a row of tomato, cucumber , feta cheese and Kalamata Olives down to the centre of each of tortilla wrap. Spread the humous around the top sides of the tortillas . Fold in the sides to seal in the ingredients then roll up tightly to make a big cigar. Cut each in half and please eat with your fingers.

350g Dark Chocolate | 250g Unsalted butter | 3 Eggs | 250g Dark Muscovado Sugar | 85g Flour | 1Tsp Baking powder


Let begin by preheating the oven to 160 C. Butter and line the base of a shallow 23cm square cake tin. Now, melt together the chocolate and butter then stir well and cool.

Whisk the lovely eggs until pale , then whisk in the sugar until thick and glossy and well mixed. Gently fold in the melted chocolate mixture, then sift in the flour and baking powder and gently stir until smooth.

After that pour into the prepared cake tin and bake for about 45 mins or until it gets firm to the touch 😉.

Test by inserting a knife , there should be a few moist crumbs sticking to it. The mixture will still be soft in the centre, however will firm up on cooling.

Cool in the tin on a wire rack for at least 45mins to 1h , then cut into 12 Squares or as you like and finish cooling on the rack. Now that it is time to serve , for the little gourmand out there , let’s experiment together by Toping it up with a Vanilla Greek Yogurt.

The perfect homemade frozen dessert for a Sunday Meltdown

1000g Low Fat Coconut yogurt | 25g Caster Sugar | 6 Tbsp Semi-Skimmed Milk | 250g cherries🍒


Pour one tub of yogurt (500g) into a large plastic container. Whisk in the Milk and Sugar and then Whisk in the other pot of yogurt. Put the lid on and freeze for 4h until almost solid.

Break up the Icy mixture and Whisk well until almost smooth. Stir in the halved cherries and put the mixture back in the freezer for another 3h until firm. Take minutes before serving .

350g Raspberries | 4 Tbsp Demerara Sugar | 50g Pink Turkish Delight | 300g Low Fat Natural Yogurt | 4 Tsp Natural Essence of Rose Water


Divide the raspberries between four large ramekin dishes. Sprinkle 1 Teaspoon Rose Water over each dish. Pour the yogurt into a bowl , then cut the Turkish delight into small pieces and mix into the yogurt. Spoon over the raspberries to cover.

Preheat the grill to a hot setting. Arrange the ramekins in the grill tray, and sprinkle each with 1 Tablespoon sugar. Grill for approximately 5 mins , until the sugar melts and caramelises. Stand for 2mins to permit the sugar to set before serving.

Unsalted butter 50g | Phyllo pastry 8 Sheets | 1Tsp Lemon Juice | 1Tbsp Chopped parsley | 200g Salmon | 110g grated Wensleydale cheese | 110g light Soft Cream Cheese


Preheat the oven to 200°C. Meanwhile, In a Bowl , mix together both Cheeses , Salmon, Lemon Juice and Parsley.

Brush a sheet of Phyllo pastry with a little butter and fold in half lenghtways and position it in order for the short sides to be at the top and bottom. Brush with more butter and place a spoonful of filling at the bottom end and to the left -hand side of the strip, nearest to you. Lift the right hand corner of the pastry up and over the filling to form a triangle. Then , fold the triangle directly up and over the next part of the phyllo.

Lift the left-hand corner and fold it over to the right – forming another triangle. Fold the triangle directly up again. Repeat the folding until the filling is completely encased in the pastry strip.

Repeat with the remaining sheets of pastry and filling. Place on a greased baking sheet and brush with the remaining melted butter.

Bake in the oven for about 10-15 mins until they are golden brown to your taste. Serve hot with your chosen sauce.
